Kansas City Vs New York Strip Steak: What's The Difference?

With so many cuts of beef to choose from, no one would judge you for confusing Kansas City and New York strip steaks, but there are a few differences to note.
A New York strip steak, as it's commonly known, is cut from the short loin of the cow. It's well-loved for its boneless tender meat and relative affordability.
It can be traced back to the New York staple, Delmonico's Restaurant, where the cut was refined, popularized, and associated with the city.
While the New York strip steak is a well-defined cut, there's some ambiguity about the Kansas City strip steak, which some argue is the original form of the New York variation.
The Kansas City strip steak originated in Kansas City, a major hub of the cattle industry. Its major distinguishing feature is that it can be served bone-in.
Others claim the Kansas City style is different in length, the part of the loin it's cut from, and the amount of fat on the tip, but some dispute these distinctions.
