Sweet And Moist Cornbread Is Just A Special Ingredient Away

Corn bread has a sweeter texture than other types of bread, which balances out meaty, umami flavors perfectly. To build on the sweetness even more, add some pineapple.
Pineapple will bring extra, natural sugar while contributing moisture. It provides a tinge of depth with its sourness, but not enough to be overpowering.
Using chopped fresh pineapple is best, but if you can only find canned pineapple, run a knife through the chunks after draining. Use ¼ cup of fruit per cup of cornmeal.
