Tagliatelle Pasta Merits Only One Classic Sauce Pairing

Tagliatelle is a long, somewhat wide pasta that resembles ribbons, giving the noodles a wonderfully spacious surface area that can support heavier sauces, including Bolognese.
A Bolognese meat sauce paired with tagliatelle is an absolute classic. Some chefs believe that the only authentically Italian way to serve the noodles is with Bolognese.
The texture of tagliatelle paired with ragu alla Bolognese creates a satisfying bite, and the surface of tagliatelle is somewhat porous, allowing to soak up the sauce.
The spongy nature of this pasta allows it to carry all the sauce's flavors of savory ground beef, pancetta, onions, carrots, celery, tomatoes, and herbs.
If you're vegetarian or vegan, you can even make plant-based Bolognese that uses non-dairy milk, lentils and cauliflowers in place of meat, and oil in place of butter.
