A go-to breakfast and brunch staple, pancakes are an incredibly versatile option for starting the day. You can't go wrong with the countless ways of customizing a stack of pancakes to suit your taste buds, but there's a common mistake people make when making pancakes, and it has nothing to do with the recipe.
You may think the pan doesn’t matter when cooking up pancakes, but you’d be surprised to know that frying your pancakes up in a sauté pan is a common rookie mistake. Using a pan with a thin bottom can cause your pancakes to burn, so always cook your pancakes using a griddle for even results.
You may already know that over-mixing the pancake batter is a bad idea, but you also need to let the batter rest for 15 to 30 minutes before cooking. This will allow those larger lumps of flour to absorb some of the liquid in your batter, which will result in a lighter and fluffier stack of pancakes.
