The Canned Food That Lets You Enjoy Basil’s Summer Flavor Year-Round
By KATHERINE BECK
Fresh basil is a refreshing addition to almost any recipe, from salads to cocktails to a light and creamy pesto sauce. Basil is one of those summery flavors, and while pumpkin spice season presents a nice change of pace, there’s a simple way to save basil’s fresh and bright flavor throughout the winter season.
One way to save basil for winter is to dry any basil leaves your plant has by simply placing them in a shaded and well-ventilated area for three to four days, or dry them in your oven on the lowest setting with the oven door cracked open. The other alternative for a fresh basil flavor throughout winter is to make basil jelly.
To make a basil jelly simply take fresh basil leaves and boil them in a pot with lemon juice, water, and sugar. Then add liquid pectin to create a jelly and remove any stems from the water. Place the mixture in jars and save for serving with cream cheese, mixing into a barbeque sauce marinade, or serving with cocktail wieners for an appetizer.
