The Clever Tip Julia Child Offers For The Creamiest Scrambled Eggs

For creamy scrambled eggs, Julia Child recommends adding some raw egg mixture to the pan once the eggs are finished cooking and the pan is removed from the heat.

As Child demonstrated in a cooking demonstration with Jacques Pépin, pour seasoned eggs into a pan with butter and scoop a fifth of the mixture back into your bowl to add later.
According to Child, the raw egg is "to cream them up" and prevent any rubberiness, since eggs continue to cook for about a minute after they’ve been removed from heat.
Child's method involves constantly stirring the eggs with a rubber spatula. The pan must be removed from the heat just before the raw egg gets added and stirred in thoroughly.
