Between male and female asparagus, the male variety tends to have thicker stalks, bigger spears, a sweeter flavor, and a softer texture, making them ideal for eating.
This is in stark contrast to female asparagus, which has to use up a lot of its energy making seeds. Therefore, bunches of all-male asparagus are more expensive.
The easiest indicator is that male asparagus will have thicker stalks. Varieties like Guelph Millennium, Jersey Giants, Jersey Kings, and Jersey Knights are male.
You can also differentiate the two based on their flowers if growing asparagus at home. Male asparagus have orange stamens while females have white pistils.
