The information comes from the company's official allergen and preparation guide, which notes that its fries are "fried in beef shortening."
Pricey steakhouses often cook their meats and veggie dishes in beef tallow for rich, savory depth. This ingredient can also make all the difference for multidimensional fries.
It's worth pointing out that the restaurant's info sheet uses the word "shortening" instead of "tallow." While they are essentially the same thing, there are some differences.
Tallow is softer at room temperature, always rendered from an animal, and is typically used in savory applications.
