The Hands-On Method That Guarantees Perfect Egg Salad
By STEPHANIE FRIEDMAN
Everyone has their own way of making egg salad, but some preparation tips are universal and make any recipe better. Some egg salad guidelines are a given, such as using fresh eggs and not under- or overcooking them, but the way you mash your eggs is just as important to the final texture of your salad, and this is the best way to do it.
The best way to break up the hard-boiled eggs is to use your hands, which are gentler and offer better control than metal utensils, so you can thoroughly mash the yolks without crushing the whites into tiny bits. This method also makes for easier cleanup; just wash your hands afterward and move on to preparing the rest of your egg salad.
If you don't want to get your hands dirty, an egg slicer is a small, cheap, and useful utensil for the same task. As for other advice, your vegetable add-ins should be chopped finely so they integrate into the salad and don't overwhelm the egg flavor, and if you have trouble cooking the eggs perfectly, try an Instant Pot to simplify the process.
