The Ingredients Anthony Bourdain Refused To Add To Scrambled Eggs
BY Autumn Swiers
Scrambled eggs were a huge part of Anthony Bourdain's career, and the chef believed the dish should be all about the egg. So, he never added water, milk, or cream to it.
While he liked his scrambled eggs with a wet finish, he achieved that with technique rather than extra ingredients. Bourdain was against adding unnecessary weight to the pan.
In a 2016 interview with Insider Tech, Bourdain said, "I don't add water, I don't add cream. I just don't feel that milk or cream adds anything. Again, it's about the egg."
