The Maine Restaurant Where You Make Reservations Via Postcard

The Lost Kitchen in Freedom, Maine, is an acclaimed restaurant with a unique reservation system: you must pen a request on a postcard and send it in the mail.
After the restaurant grew in fame and received nonstop phone calls inquiring about reservations, owner and chef Erin French decided to use this postcard method.
As the Lost Kitchen typically operates between May and October, French and her staff spend time randomly picking postcards during their off-season.
They then call each lottery winner to secure a date. Non-selected cards are retained in case a party cancels, but French saves them all.
