Roasted veggies are usually tossed in oil and seasonings before cooking for added richness and to prevent burning. However, a better alternative is spice or herb compound butter.
Infusing butter with fresh herbs or spices to create a compound butter will supplement its dairy richness with savory, spicy, and zesty flavors. Plus, it’ll add a crispy crust.
Due to butter’s low smoke point, you can incorporate clarified butter or ghee to raise its smoke point, allowing you to use it at roasting temperatures.
