Professional chefs know the importance of keeping a kitchen clean, and celebrity pastry chef Duff Goldman likes to clean before he bakes, rather than just afterward.
Goldman told Insider that he doesn't start baking until his entire kitchen is clean. Taking out the trash and doing the dishes helps him get into his own culinary zone.
Only after his space is tidy does Goldman begin to prep. He advises bakers to have their equipment and materials ready, to avoid having to search for them in the middle of baking.
Goldman calls misplaced materials and dirty dishes "gumption traps," or moments that could distract you from taking prompt and necessary steps in the baking process.
