The Secret Ingredient For Perfectly Melted Cheese Sauce
By KALEA MARTIN
Cheese varies in hardness, dryness, and creaminess which means that every cheese melts differently. Sometimes an additional ingredient is needed to enhance the texture of melted cheese, like this simple addition for a perfectly creamy cheese sauce.
One easy way to create a smooth cheese sauce is by adding sodium citrate to the cheese mixture. This way, it doesn’t matter what cheese you use, because the sodium citrate will convert any kind of mixture into a delicious, buttery texture.
Sodium citrate is an emulsifying salt that helps turn any cheese mixture into a gooey and delicious spread. Just shred your cheese, heat an equal amount of water, whisk in 1 teaspoon of sodium citrate per 1 cup of water, and you’re good to go!
