The Temperature Trick To Get Crispy Wings In The Air Fryer

It’s hard to make wings properly crisp while air-frying them, but achieving a tender inside and crispy outside is possible if you use a two-step cooking process.
Start by air frying the wings at a relatively low temperature, around 380 degrees Fahrenheit, to cook the meat through and while keeping it tender.
This step also gives the skin time to render some of its fat, which will help with crisping. Next, increase the temperature to 400 to 425 degrees.
This surge of heat will rapidly brown and crisp up the skin. Within a few minutes, you'll have wings that have a tender, flavorful interior encased in a crisp exterior.
You can also try applying some baking powder to your wings before cooking them. It will enhance the Maillard reaction, the chemical process responsible for browning and crisping.
Simply mix your seasonings with a teaspoon or two of baking powder, coat the wings evenly, and put them in the fridge for about an hour before using the two-step cooking process.
