Drip cakes are named for the thin coat of icing or ganache that is piped around the perimeter of the cake so that it drips down the sides, creating a stunning effect that can be mastered in a few ways.

Firstly, frost your baked cake with sturdy buttercream and chill it in the fridge prior to adding the drip, so that nothing softens or melts. One method to make a drip cake is to take a spoonful of ganache and pour it carefully around the edge of your cake, then pour the rest into the middle of the top of the cake and spread it until smooth.

You can also fill a squirt bottle with ganache and work your way around the edges of the cake, giving the bottle a light squeeze to create drips, then fill in the top in the same way as the spoon method. You can also pour ganache over the top of the cake and use a spoon to push the ganache towards the edges and create drips.
