Ways To Use Up Your Extra Salad Greens

Use In Wraps
When your greens have begun to wilt and you want to enjoy them without making them the main focus, such as in a salad, you can resort to a variety of wraps. Use these extra greens to add some color and crunch to hot or cold wraps like burritos, spring rolls, or sandwich wraps.
Sautéed
Salad greens are also ideal for sautéing because you can use the sautéed greens in a variety of other recipes in addition to flavoring them in a variety of ways as a side. Sautéed greens can also be used as an added ingredient for omelets, quiches, or frittatas.
Smoothie
The best approach to use up salad greens is to blend them into a smoothie or add them as an extra boost to freshly pressed juice. According to Bon Appétit, many salad greens have a sweeter flavor than other greens like spinach or kale and pair well with other fruits or vegetables.
Fold In Warm Dishes
Salad greens can be folded into other hot foods, such as lasagna or stuffed shells, or they can be added to soups or stews just before serving. This method has the advantage of requiring little preparation, and the heat from the other items gently softens the greens just enough to incorporate them into the dish.

Finally, salad greens are excellent for preparing a variety of sauces and dips. Salad greens can be used to make a variety of dishes, including hummus, spinach and artichoke dip, or adding a bulk to your basil pesto.
