If you take eggs Benedict’s toasty English muffin base, Canadian bacon, poached egg, and silky Hollandaise sauce and swap out the Canadian bacon for crab, you get eggs Neptune.
This seafood and egg dish is widely consumed along the shorelines of America, specifically in the New England, Gulf Coast, and Northern California regions where crab is plentiful.
These regions are home to pure, high-quality blue, king, snow, and stone crabs that this dish is commonly made with. Eggs Neptune is often served on Mother’s and Father’s Day.
If you’re out of reach of the good stuff, eggs Neptune can be made without fresh crab. Use lump crab meat from a can, taking a few steps to break down the meat and lessen the odor.
Strain your lump crab meat, soak it in one cup of milk per pound of meat, cover the bowl, and put it in the fridge for 20 minutes. After cooling the meat, strain it and flake it.
