Why American Butter Doesn't Hold A Candle To Irish Butter
BY Amanda Berrill
Ireland boasts rainy weather that yields emerald-green pastures and allows for healthy, happy cows to feed freely, creating a perfect scenario for the production of tasty butter.
Additionally, a combination of a year-round mild climate, fresh grass, soil rich in nutrients, and various herbs and plants contribute to the sweet, grassy flavor of Irish butter.
As cows roam in their natural surroundings feeding on grasses, they consume beta carotene naturally found in the grass that gives Irish butter its iconic deep yellow hue.
Irish butter also has a higher fat percentage than most American butter. It has at least 82% butterfat, with some containing up to 90%, which gives them a luxurious texture.
Unlike American butter, which requires only 80% fat, Irish butter has less water and is never more than 16%. So, it offers more flavor and a smoother, more desirable mouthfeel.
