Why Milk Is The Secret Ingredient For Perfectly Tender Pork Chops

Milk marinades tenderize pork chops like other marinades, but its natural enzymes break down meat's proteins and fibers more gently than acids, which can overwork pork.
Plus, the sugars in milk help brown the meat and add some sweetness. To start, mix two to three cups of milk and two teaspoons of salt, which also tenderizes meat and adds flavor.
Then, ease your chops into the milk bath, refrigerate, and marinate for one to four hours. You can also add seasonings to the bath, as long as they don't contain extra salt.
The more lactic acid in the milk, the better, so whole milk and buttermilk are ideal. Before dredging the chops, remove them from the bath, shake off any extra liquid, and pat dry.
