Why The Position Of Your Oven Rack Matters For Pizza
By TALIN VARTANIAN
At its core, pizza is simple: dough meets sauce, cheese, a few toppings, the heat from an oven, and voilà, a culinary masterpiece is born. Making a homemade pie is easy, fun, and creative, but when it comes time to bake it in the oven, make sure to place the oven rack in the proper position for best results.
Position your pizza pan towards the bottom of the oven, since the heat radiating from the base makes the underside of the dough super crispy and golden brown. Casseroles and pies go higher in the oven, since they benefit from rising heat, while the leveled and consistent middle rack is for cookies and cakes.
Additionally, if you enjoy super melty cheese that pulls and stretches when you take a bite of a slice, place the pizza on the top rack (after it's already cooked) and set the oven to the broil setting. However, you must keep a close eye on your pie, because the pizza can go from broiled to burnt very quickly.
