Why Wolfgang Puck Dresses Salad On A Sheet Pan Before Plating

Salad can get soggy for a number of reasons, and it can be tricky to dress the vegetables evenly and thoroughly without squishing them, especially when dealing with baby greens. Chef extraordinaire Wolfgang Puck has a simple trick that will help your salad arrive at the table dressed looking (and tasting) great.

In an interview with Wired, Puck revealed that he dresses his salad by spreading it out on a sheet pan first. This trick has to do with space: When greens are laying on a sheet pan, they all have equal real estate, aren’t squished or crushed, and get an equal distribution of dressing, which is super helpful with more delicate lettuces.
A salad with arugula, peas, radishes, and potatoes
With this tip, your lettuce will be nicely coated and your salad won't be drowning in a pool of extra dressing at the bottom of the dish. Puck’s other tips for serving a salad that looks stunning include dressing up the vegetables with edible flower petals and positioning larger leaves of lettuce at the base of the salad when plating.
