Why You Should Always Buy Chicken Thighs With Skin
By SARAH MARTINEZ
When deciding on which chicken thighs to buy, you should pick skin-on with bone-in rather than skinless with bone-in. Even if you don’t like chicken skin, you might want to opt to keep the skin for this important reason.
While cooking the chicken thigh, the skin will prevent the meat from overcooking and help it retain moisture. The skin will also add more flavor as it is fat, and the fat will drip down into the meat while cooking.
If you’re worried about the skin becoming soggy, you can put a brick or heavy cast iron skillet on top of the thighs to release the fat, which will then result in crispy skin. If desired, you can take off the skin after the chicken is finished cooking or eat the chicken skin separately.
