There are many beliefs surrounding cast iron pans, thanks to associated rules on how best to use and maintain them, such as their ability to evenly cook food.
However, cast iron pans are actually poor at transferring heat across the surface, resulting in unevenly heated food. Its low heat conductivity also makes it slow to warm up.
The pan will get hot in areas directly over the stove, but the pan's perimeter won't heat to the same level. Pans of other materials, like aluminum, are typically more effective.
