You can customize chicken enchiladas with a range of different salsas, cheeses, and veggies, but cream of chicken soup is the secret weapon to a creamier, more flavorful dish.
As a condensed soup, cream of chicken is ultra-thick and adds moisture to an enchilada filling without creating a watery or soupy texture when cooked.
It's also a great binder to hold other filling ingredients. Add a cup of the cream to shredded chicken and cheddar or jack cheese for a simple three-ingredient enchilada filling.
Alternatively, you can use the cream as base for enchilada sauce, or even add equal parts sour cream or cream cheese and cream of chicken soup for a balance of tangy and savory.
