You Shouldn't Eat The Skin From These Popular Fish

Per Ed Cotton, chef at Jack & Charlie's and Leonetta in NYC, the skins of "marlin, shark, sword, tilefish, and king mackerel are very high in mercury" and unsafe if over-consumed.

You can still eat many other fish skins, but as Cotton told us, the said species' skins shouldn't be consumed in large portions. Hence, it's best to get rid of the skin altogether.
Apart from fish skins with high levels of mercury, skate fish skin is something Cotton says you shouldn't eat either, as it contains "thorn-like barbs on the outside of the fish."
