It's Pie Time

Grandma's recipes (and oven) live on in Williamsburg

Recently, pizzas have been all the rage in Brooklyn, from Bushwick to Bed-Stuy, but let's not forget the other kind of pie.

Last winter, in a quiet corner of Williamsburg, Rachel McBride opened The Blue Stove, an airy bakery and café decorated with vintage cabinets and a retro blue oven that once belonged to her grandmother.

McBride bakes a rotating selection of seasonal pies; her offerings change so often that she doesn't print a set menu. This summer, she's baked classics like strawberry-rhubarb and newer concoctions such as blackberry mousse. In the fall, look for plum-ginger and Concord grape.

There's also a cast of savory quiches on the menu, plus muffins and cookies. But the pies are the star of the show. "I use my grandmother's recipes every day," says McBride. "She taught my mom, and my mom taught me." Here, McBride shares one of her family's favorite fall pies, made with sweet-tart pears (click here to download the recipe).
