Jam Tomorrow
Christine Ferber's legendary jams touch down in Manhattan
Between db Bistro Moderne's supersoft scrambled eggs with ham and cheese and its incredibly flaky croissants, we've found plenty of excuses to stop by the restaurant for breakfast. But the best reason to be in midtown before work is not on a plate--it's in a jar.
Accompanying the meal's house-made breads and brioche is the highly coveted jam from Alsatian preserves princess Christine Ferber. Her small-batch confitures have drawn attention from top French chefs and earned her something of a mythical status in her homeland.
For years, jam lovers outside of France had to make the transatlantic trip to get a taste. But db Bistro's chef Olivier Muller--a Ferber fanatic and fellow Alsace native--called in a favor from his importer friend Olivier Wittman and convinced the fourth-generation pastry chef to share her inventive combinations with a larger, albeit still limited, audience.
The list of available jams changes frequently, but the latest shipment contains favorites like strawberry, apricot, yellow grapefruit and red currant.
So have a brioche--or three--and go heavy on the jam. Or, if you can't make it to midtown in the morning, you can order your own jars online.
