It is low in calories, high in fiber, and packs a healthy dose of one's daily value of vitamin C as well as significant amounts of vitamin K, vitamin B6, and folate. While it is definitely not free of carbs, cauliflower has much fewer per cup when compared to legumes and grains like rice, which is what many people substitute cauliflower for.

It should come as no surprise, given that CAULIPOWER is the number one maker of cauliflower crust pizzas, that these "one-pan" meals are inspired by Italian flavors.

The inaugural three varieties — Cauliflower Gnocchi with Savory Pesto, Spinach Gnocchi with Tuscan-Style Marinara, and Cauliflower Penne Pomodoro — each take under 10 minutes to prepare, require little prep, and have two to three servings of vegetables. Additionally, each serving — of which there are two per bag — is under 300 calories.

Becker, a former broadcast journalist and PR agent, began making gluten-free foods when her children were diagnosed with celiac disease, notes Forbes in their profile. Her cauliflower pizza crust proved so popular that in 2016 she quit her PR job and launched CAULIPOWER. In addition to pizza crust and the new pastas, the company offers cauliflower-coated chicken tenders, riced cauliflower, and tortillas, according to Restaurant News.
