Muddle arugula with lemon juice and lime marmalade to make a top NYC bartender's cocktail that is bright but has a bit of spice and vegetal flavor—kind of like a salad but a lot more fun.

Ingredients

  • 1 handful arugula
  • ½ ounce fresh lemon juice
  • 2 bar spoons lime marmalade
  • 1½ ounces Bacardi Superior White rum
  • ½ ounce yellow Chartreuse
  • Ice

Directions

  1. In a cocktail shaker, muddle the arugula with the lemon juice and marmalade. Add the remaining ingredients, fill the shaker with ice then shake vigorously until well chilled.
  2. Fine-strain into a chilled coupe. Garnish with a sprig of arugula and serve.
