This minty, refreshing drink is perfect for a party or a hot summer afternoon.

Ingredients
- 6 to 8 mint leaves, torn
- 2 ounces Plymouth gin
- ¾ ounce lime juice
- ¾ ounce simple syrup
- Ice
- Soda
- Mint spring, for garnish
Directions
- In a mixing glass, add the mint leaves and lightly muddle. Add the remaining ingredients and fill the mixing glass with ice. Shake and strain into a highball over fresh ice. Top with soda and garnish with a large mint sprig.
