Salt's Cure

Charcuterie is becoming an evermore popular kitchen experiement in L.A. restaurants, and the meats offered at this restaurant are among the best. Aromatic slivers of cured pork shoulder and lean, flavorful whisps of bresaola-like beef are two of our favorites, but we've yet to try something of the cured meat menu that wasn't wholly enjoyable.
