When is an oyster not an oyster? If what you're eating is cool and creamy, its slippery texture accompanied by the briny taste of the sea, mustn't it be? Not when Michael Voltaggio is committing oyster subterfuge, topping spheres of sour cream with the herb oyster leaf and dots of mignonette. It's not an oyster, but it certainly taste like one.
