We love the straightforward, vegetable-heavy dishes served at this Echo Park restaurant. The rabbit escabeche salad makes doubly good use of the vinegar-and-olive-oil braising liquid the meat is cooked in: It lends the rabbit its punchy edge, and is repurposed to dress the salad greens.
