Genuine Liquorette: Master barman Eben Freeman is behind the new subterranean drinking den under Genuine Superette. The space looks like a boozy bodega where guests can literally drink from the bottles on the wall. For those looking for a cocktail, Freeman is serving his own alongside ones from his "cocktail collective," where he asks bartenders from around the world to develop a drink from a rare spirit.

Kat & Theo: Paras Shah, formerly of Per Se and El Bulli, is in charge at this Flatiron newcomer. Shah's kitchen turns out a menu of house-made flatbread stuffed with anchovies and shishito peppers alongside skate with corn chowder, pickled radish and chile oil. Desserts like chocolate crémeux with lavender, which come from Eleven Madison Park and Pearl & Ash alum Serena Chow, shouldn't be missed either.

Paramount Coffee Project: Australian coffee powerhouse Paramount debuts its first U.S. outpost this Friday. Owners and coffee addicts Jin Ng, Mark Dundon and Russell Beard source their beans from a mix of local and global roasters, focusing on educating their guests about what's in their cups. To go with all of that coffee, there's a selection of toasts and breakfast sandwiches.

Raku: Las Vegas dining destination Raku just debuted its first outpost in West Hollywood. The casual restaurant specializes in fresh-from-the-grill yakitori and robata skewers, and homemade tofu. A true izakaya, the kitchen stays open late—until at least 1 a.m.

San Francisco
The Dorian: The old Circa space is now home to The Dorian, an opulent restaurant helmed by the Palm House's Chris Ricketts. The menu doesn't push any boundaries, but rather focuses on a raw-bar program, a few steakhouse classics and a $40(!) burger served with Dungeness crab and black truffle aioli.

Cala: Famed Mexico City chef Gabriela Cámara's first restaurant in the U.S. is soft-open right now and should make its official debut in October. Expect sophisticated seafood-focused Mexican fare here and more casual dishes at her spin-off, Tacos Cala, which will be nixtamalizing corn for its tortillas in-house.

MingHin on Grant Park: Chinatown dim sum favorite MingHin just started serving shumai, congee and other small plates in what was Yum Cha Sum Parlour. The team didn't make many changes to the space, but nevermind, it's all about the tasty bites here.

The Cotton Duck: Part art gallery, part restaurant, The Cotton Duck will be changing its installations and menus every three months. On chef Dominic Zumpano's launch menu, there's smoked beef tongue with rye gnocchi, scallops with rice crepe and salsify, and bomboloni with caramel and parsnip for dessert. Bonus: The space is BYOB with sophisticated cocktail mixers on hand.

Wicked Bloom DC Social Club:
Chef Rob Sonderman's crew from DCity Smokehouse is opening its bar-and-snack spot Friday night with dishes like the gut-busting smokehouse bomb (a mac-and-cheese waffle with pork, brisket chili, cheese and sour cream) and drinks like one dubbed Out of the Frying Pan, into the Fire with mescal, lime, pomegranate and habanero.

Aslin Beer Company: The eight house brews available at this Herndon spot are made just feet away from diners' seats. Beer can also be purchased in growlers and taken home, but for those who want to drink in the brewery, there's food from local restaurants The Wiener's Circle and Taste of the World. Bottoms up.

Miami
Ergon: Greek mini chain Ergon opens in Miami with its pork belly gyros, fava purée with grilled octopus, a Greek yogurt bar and spanakopita shipped in from the motherland regularly. The team keeps things casual: Orders are placed at the counter, where guests can also purchase packaged goods from the mother country.
