April Bloomfields' Roasted Young Onions & Sage Pesto

Inside April Bloomfield's new book, plus a bonus recipe

It's time to remeet April Bloomfield.

You know her as the English gal with the lauded (and larded) burgers, calf's liver and bacon-wrapped dates at the Spotted Pig, the Breslin and the John Dory.

But with the arrival today of her new book, A Girl and Her Pig ($30), you'll learn even more about Bloomfield through a bounty of heart-winningly personal recipes and stories peppered with some damn charming illustrations (a piglet in red boots anyone?).

A Girl and Her Pig reminded us that for a woman whose name is typically uttered in the same breath as "whole-animal feast," Bloomfield has a canny way with vegetables. The book's co-author, JJ Goode, said it best when he pronounced in the foreword that Bloomfield is a "vegetable savant."

As further proof of Bloomfield's produce prowess, she and Goode gifted us a beloved recipe that was cut from the book: golden-brown roasted red onions (click here for the recipe). Paired with the book's recipe for punchy sage pesto, this dish will have you seeing onions in a new way–like, say, as a main player in supper.
