Ingredients
- For the Carrot Shrub
- 1 large carrot
- ¾ cup white sugar
- ¾ cup apple cider vinegar
- 2 pieces cardamom
- For the Cocktail
- 2 ounces mescal
- 1 ounce carrot shrub
- ¾ ounce ginger syrup
- ½ ounce lime juice
- 4 dashes Bigallet thyme liqueur
- Pinch of salt
- Sprig of rosemary
- Sprig of mint
- Ginger beer, to top
Directions
- Make the shrub: Combine all all ingredients in a blender and blend on high until liquified. Set aside 2. Combine all ingredients except for the rosemary, mint and ginger beer in a shaker and shake hard. Double strain into a Collins glass with ice and top with ginger beer.
- Garnish with rosemary and mint to serve.
