Ingredients
- For the Ube Infusion
- 1 ounce ube extract
- 1 liter simple syrup
- For the Acidulated Pineapple
- 1 liter unsweetened pineapple juice
- 40 grams citric acid
- For the Cocktail
- 1½ ounces rum
- ¾ ounce ube infusion
- 1 ounce acidulated pineapple
- Pineapple slice, for garnish
Directions
- Make the ube infusion: Stir the ube extract and simple syrup to combine. Set aside.
- Make the acidulated pineapple: Stir the pineapple juice and citric acid until fully dissolved. Set aside.
- Make the cocktail: Add all the ingredients to a cocktail shaker. Shake and strain into a rocks glass over ice. Garnish with a pineapple slice and serve.
