Grilled Almond Butter and Jelly Sandwich
We gave the classic PB&J an upgrade, using almond butter, and sautéing it in hot butter to make a crispy, golden, melty, gooey sandwich.

Ingredients
- 2 dried apricots, roughly chopped
- 3 tablespoons apricot jam
- 1 teaspoon fresh lemon juice
- 2 slices soft white bread
- 3 tablespoons smooth natural almond butter
- 2 teaspoons dark honey (such as buckwheat)
- Pinch flaky sea salt
- 1 tablespoon unsalted butter, divided
Directions
- In a small bowl, combine the chopped apricots, jam and lemon juice. Spread the mixture onto one slice of bread.
- Spread the almond butter onto the second slice of bread, then drizzle with honey and sprinkle with the flaky sea salt. Flip onto the jam slice to sandwich.
- In a small sauté pan, melt half of the butter over medium heat. When the butter begins to foam, place the sandwich in the pan and cook until golden brown, 1 to 2 minutes. Flip and add the remaining butter, swirling the pan to coat the bottom slice well. Cook until the second side is golden brown, another 1 to 2 minutes. Serve.
