Chinese Bacon Recipe

Ingredients

  • 2 tablespoons vegetable oil
  • 2 garlic cloves, finely chopped
  • 1 tablespoon fresh ginger, finely chopped
  • 1 bunch scallion whites, finely chopped
  • 1 Thai chile, finely chopped
  • One 8-ounce package of Chinese bacon
  • 3 tablespoons oyster sauce
  • ¼ cup Shaoxing wine (Chinese rice wine)
  • 2 cups water
  • 1 tablespoon granulated sugar

Directions

  1. In a medium saucepan set over medium heat, add the oil and warm until shimmering. Add the garlic, ginger, scallions and Thai chile and cook until soft, about 2 minutes. Add the bacon, oyster sauce, Shaoxing wine, water and sugar. Bring to a simmer, then turn down the heat and cook on low for 1½ hours.
  2. Turn off the heat and let the mixture cool to room temperature. Strain the bacon, discarding the leftover liquid. Cut the bacon into 1-inch pieces.
  3. To serve: In a grill pan set over medium heat, add the bacon and grill until warmed through and grill marks form, 5 to 7 minutes. Serve immediately.
