This pink fizzy cocktail is perfect for springtime sipping
Right now is rhubarb's time to shine. We pickle it. We put it in pies and pound cakes. If you're wondering what to do next with this fleeting spring ingredient, add it to a cocktail. Happy hour welcomes the tart stalks in the form of a beautiful pale pink simple syrup that promptly gets swirled into a light and fizzy spritzer.
To make the rhubarb syrup, simply add 2 stalks of chopped rhubarb, 1 cup of water and 1 cup of granulated sugar to a small saucepan over medium-low heat. Stir until the sugar dissolves and continue to cook until the liquid is reduced by half and has reached the consistency of maple syrup. Strain rhubarb out before using.
To a tumbler, add ice, 1½ ounces of vodka and 1 ounce of rhubarb simple syrup. Stir until combined. Top with Prosecco. Garnish with a mint sprig and serve.
