The only problem is that soft cheese doesn't grate so well—if at all. Luckily for you and your pasta needs, we've got a hack that makes grating soft cheese not only possible but really easy.
Before grating a soft cheese, throw it in the freezer for a few minutes to firm up.
As we all know, firm cheese grates really nicely.
Just don't forget about the cheese after you put it in the freezer! About 15 minutes should do the trick; you want it to be solid, not frozen. When you're ready, pull the sucker out then prepare to be amazed at how easy and mess free it is to top that pasta with mozzarella or that salad with a little goat, Monterey Jack, etc.
