Spicy Green Juice with Yuzu Kosho

Ingredients

  • 1 green apple, quartered
  • 2 cups watercress (or other spicy greens like arugula or mizuna)
  • 1 medium cucumber
  • 1 cup mixed tender green herbs (such as basil, cilantro and mint)
  • ½ cored fennel bulb, halved
  • 1 lime, quartered
  • Ice
  • ½ teaspoon yuzu kosho

Directions

  1. Pass the apple, watercress, cucumber, herbs, fennel and lime (in that order) through a juicer, discarding the solids.
  2. To a cocktail shaker, add the ice along with the juice and the yuzu koshu. Cover, shake vigorously and strain into a tall glass (you can also whisk the yuzu kosho into the juice and serve it over ice). Finish with an herb sprig if you like.
