Firestone Walker Brewing Company: It's been three years in the making, but the Venice Propagator campus of this popular brewery is now open. There will be location-specific experimental ales, plus favorites like the award-winning Double Barrel Ale. L'Ami: Take a seat on one of the royal-blue-cushioned chairs and enjoy accessible French and Mediterranean food, like salmon tartare with endive and mango or a stunning couscous royale. The Guild: The Sunset Strip's latest spot is also one of its coolest, with distressed wood walls, a brown leather banquette and an antique-looking ceiling. Art deco touches harken the golden age of Hollywood, while the menu stays current with dishes like quail egg-topped bruschetta. WesBurger 'n' More: At long last, Wes Rowe's burger project has a brick-and-mortar home. In this vintage diner-esque space, he's serving three burgers including the Okie Burger with griddled onions, cheese and mustard, and his take on a fast-food burger called the All-American. Hina Yakitori: Trained at Tokyo's popular Tori + Salon, Tommy Clearly is cooking lots and lots of chicken at this yakitori joint. On the menu, there are the usual options, like wings and thighs, and less-common ones, like knee cartilage. Chicago
Gino's East: This deep-dish chain is opening its Mexican-inspired pizza spot in Pilsen—something it's already got going in Mexico City. Mexico meets Chicago in carnitas-topped pies and a vegetarian pizza with cactus, pickled onion, mushrooms and potato. Roister: Grant Achatz and Nick Kokonas are taking a stab at something a bit more "casual," with their new project across the street from The Aviary. The kitchens are completely exposed to the two dining rooms, so guests can watch the team make dishes like scallop crudo with passion fruit, mustard and charred daikon, or a large-format chicken that's been braised, fried and poached with sunchokes and chamomile.
