Stumptown Coffee Roasters has a much better caffeine fix for the hot, humid months ahead. Say good morning to the cold brew tonic ($4 in Portland, $4.50 everywhere else), rolling out today at Stumptown's nine locations across the country.

The Portland-based roasters riff on the recent espresso tonic trend, but instead of sloshing together espresso with herbal, fizzy tonic water, they opt for single-origin Ethiopian Yirgacheffe Chelbessa slowly steeped for 12 hours and double-fitrated for a bright, juicy finish.

"We knew we wanted to do a special cold brew coffee drink this summer in our cafés," Diane Aylsworth, director of Stumptown's cold brew division, explains. "Our team was experimenting with a soda-like creation when Fever-Tree popped onto our radar, so we started formulating with their tonic water."

But the real cherry on top of this summery coffee tonic? An actual cherry.

"As we were looking to garnish the drink, we first turned to limes to mimic the garnish on a gin and tonic," Aylsworth explains. "But then someone on the team suggested that cherries might look better, and we found adding the Luxardo maraschino cherry not only looked good, but adding a little bit of the cherry syrup perfectly brought all of the flavors in the drink together."

However, the drinks are available until September only, so grab one now before these cold brew tonics (and flip-flop weather) come to an end.
